Every PDF carries an author, a title, the app that made it and the date it was written. Those fields travel with the file and stay readable after you share it. Open any PDF that came out of Word, Pages or Google Docs and look at its properties. The fields are filled in automatically, usually with the name of the account that wrote the document and the name of the file before it was renamed.

In Preview
Open the PDF and press Cmd + I. The inspector lists title, author, subject, keywords, creator and producer.
In Terminal
Run mdls yourfile.pdf to print the same fields as text, handy when you want to check many files quickly.
After exporting
Check the exported copy the same way. If the author and title are gone, the file is clean.

The row that matters is the third column. A cleaned PDF with the client name still printed on page two is still a leak, and a black rectangle drawn over a name leaves that name selectable underneath.

Filings and exhibits that go to the other side carry the name of whoever drafted them and the internal file name. Both go away with the export.
Consultants and agencies
A proposal reused from another client keeps that client name in the title field. Clean the copy before it goes out.

What metadata does a PDF carry?
Title, author, subject, keywords, the application it was written in, the engine that produced the PDF, and creation and modification dates. Many files also carry an XMP block with the same information in XML form.
How do I see the metadata of a PDF on a Mac?

Does BlurData remove PDF metadata?
